Chocolate Chip Cookies

Who doesn’t love chocolate chip cookies? My favourite quick easy snack for my family, or to take to a pregnant or postpartum mama. Cinnamon and ginger are warming spices to support digestion. And ground almond flour for added protein. And dark chocolate for a dose of love. I try to use organic ingredients where I can, but sometimes I don’t have and so will use whatever. Hope you enjoy these as much as we do!

Ingredients:

  • 2 cups almond flour

  • 1 cup oats

  • 1/2 cup buckwheat flour

  • 1/2 cup coconut sugar

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp ginger (optional)

  • 1/4 tsp salt

  • 1 egg

  • 150grams melted butter

  • 50grams of dark chocolate cut into small pieces


How to:

  • Pre-heat oven to 180 degrees

  • Place all the dry ingredients into a bowl and mix

  • Add the egg and melted butter and stir to make the dough

  • Add chocolate pieces

  • Roll into 11-12 cookie balls and flatten slightly

  • Bake for 11 minutes and let cool enough to eat
