Chocolate Chip Cookies
Who doesn’t love chocolate chip cookies? My favourite quick easy snack for my family, or to take to a pregnant or postpartum mama. Cinnamon and ginger are warming spices to support digestion. And ground almond flour for added protein. And dark chocolate for a dose of love. I try to use organic ingredients where I can, but sometimes I don’t have and so will use whatever. Hope you enjoy these as much as we do!
Ingredients:
2 cups almond flour
1 cup oats
1/2 cup buckwheat flour
1/2 cup coconut sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp ginger (optional)
1/4 tsp salt
1 egg
150grams melted butter
50grams of dark chocolate cut into small pieces
How to:
Pre-heat oven to 180 degrees
Place all the dry ingredients into a bowl and mix
Add the egg and melted butter and stir to make the dough
Add chocolate pieces
Roll into 11-12 cookie balls and flatten slightly
Bake for 11 minutes and let cool enough to eat
